🧅 Pickled Red Onions

Ingredients

  • 1 red onion
  • 1 part vinegar
  • 1 part water
  • Big pinch of salt

Directions

  1. thinly slice the red onions from root to stem
  2. place in a jar or quart deli container
  3. half fill the container with cold water, fill the remainder with vinegar
  4. drain the container into a saucepan and add a big pinch of salt
  5. bring to a boil, pour the mixture over the onions
  6. place into the fridge. they keep for a long time, up to a month at least.
