🥨 Pretzels
Ingredients
- 500g Bread flour or 3 1/4 cups
- 275g water 275ml or 1 cup
- 5g yeast or 2 tsp
- 10g salt or 2 tsp
- 35 gram butter or 3 tbsp, + 1 tbsp for brushing before baking
- 5 gram sugar or 1 tsp
Water bath:
- 65 grams baking soda or 3/4 cup
- 45 grams honey or 3 tbsp
Topping ideas:
- pretzel salt (needs to be the powdered + compressed kind, eg https://a.co/d/h12ZjJ5)
- everything bagel seasoning
- sesame seeds
Directions
- Mix all ingredients except butter in a stand mixer with a dough hook for 5 minutes on medium speed.
- Add butter and mix for another 5 minutes until a smooth dough ball forms.
- Rest for 1 hour in a covered bowl (or up to overnight)
- Divide dough equally into 6 pieces, and shape into tight balls. Cover and rest for 10 minutes.
- Roll each ball into a 7 inch (18cm) rope. Cover and rest for another 10 minutes.
- Prep water bath: in a large pot, combine baking soda + honey and 3-4 quarts/liters of water. Bring to a boil while you shape the pretzels.
- Prep a sheet tray with parchment paper or a silicone mat. Preheat oven to 425F/220C.
- Roll each rope into a 30 inch (75cm) rope. Shape into pretzels.
- One at a time, dunk the pretzels into the water bath for 30 seconds on each side, then place on the sheet tray.
- Brush with melted butter and sprinkle with toppings.
- Bake for 15-20 minutes until deeply brown.
- Cool on a wire rack for 10 minutes before shoving into mouth.
